Es wird hauptsächlich für Gemüse verwendet und verfügt über eine flache, rechteckige Klingenform mit gerader Spitze und kräftigerem Klingenrücken. Besonders geeignet ist es zum Schneiden von Chinakohl oder Weißkohl in feine Streifen. Darüber hinaus eignet es sich auch zum Schälen, Hacken, Rotationsschneiden (Katsuramuki), feinen Hobeln und zum Anfertigen dekorativer Garnituren.
